The art of making the perfect “Angel Food Cake”

  1. Preheat the oven to 160°C (320°F). Grease the bottom of a cake mold with butter.
  2. Afterwards, in a large bowl, beat the egg whites until stiff peaks form using an electric mixer.

Likewise, gradually add the sugar and continue beating until stiff and glossy peaks form.

Next, add the vanilla and cream of tartar to the meringue and gently fold in with a sweeping motion.

4. Another key point is to sift the flour over the meringue and mix carefully until fully incorporated.

5. Pour the cake batter into the prepared mold and spread it evenly.

6. Place it in the preheated oven for approximately 30 minutes or until golden and firm to the touch.

9. Slice the cake horizontally in half to obtain two equal discs and set aside.

To make the flan, blend the eggs, condensed milk, regular milk, rum, and vanilla in a blender until smooth and well combined.

Next, pour the flan mixture into the mold and cover with aluminum foil.

1. Place it in the preheated oven at 180 degrees Celsius (356 degrees Fahrenheit) in a water bath, for 50-60 minutes.

2. Once the time has elapsed, remove from the oven and let it cool completely before unmolding.

3. Once cool, carefully unmold the quesillo and set aside.

Assembling the Angel Food Cake

We are going to assemble this delicious cake in a transparent plastic container.

Firstly, we place one layer of sponge cake in the container.

Then, we soak it with the milks: condensed milk, regular milk, and evaporated milk.

Next, we place the flan or quesillo as the second layer.
